Within the Epidemiology and Public HealthResearch Unit, Dr. Torsten Bohn , Principal Investigator, is in charge of the FNR funded project CAROPROT ,which aims to explore the interaction of proteins on the digestion andbioavailability of carotenoids, a group of secondary bioactive plant derivedconstituents.
Carotenoids have been associated in several epidemiologicalstudies with a reduced risk of several chronic diseases such as cardiometaboliccomplications and diabetes.
Withinthis project, we are offering the opportunity for a Master student to completean internship within our facilities, focussing on practical analytical aspects.
The maintasks of the student will be to investigate the interaction of proteins andcarotenoids from plant food matrices during simulated gastro-
intestinaldigestion, employing an already established invitro model. Endpoints determined will include bioaccessibility ofcarotenoids, cellular uptake of carotenoids, digestibility of proteins andlipids, and selected physico-
chemical measures such as surface tenion of thedigesta, determined by tritrimetric and spectrophotometric methods.
